  • 8 oz of unsweetened applesauce or → equivalent to about 2 medium apples cooked into a puree if making homemade

  • 1 cup  all-purpose flour → can be reduced to ¾ cup for an even softer texture ⅔ cup almond flour (or hazelnut flour)

  • 4 tbsp unsalted butter, softened

  • 2 tsp baking powder

  • 1 tsp pumpkin spice OR 1 tsp gingerbread spice mix (cinnamon, ginger, nutmeg, cloves)

Directions

  1. Preheat oven to 350°F.

  2. Prepare the applesauce (if homemade)

    • Peel and chop 2 medium apples.

    • Steam until soft (about 10 minutes).

    • Blend into a smooth compote

  3. Combine all the ingredients in a bowl and mix until smooth. (The final batter should be spreadable, not rollable (important for soft texture).)

  4. Line a small baking dish or cake pan with parchment.

  5. Spread the batter into a layer about 1" thick

  6. Bake for 15–18 minutes, until lightly golden but still soft to the touch.
