This lightly sweetened lemon cake is made with creamy Greek yogurt, fresh lemon, and juicy berries for a simple first birthday dessert the whole family can enjoy. Topped with a tangy Greek yogurt frosting and naturally decorated with fresh fruit, it's soft enough for little hands to explore while still feeling worthy of a special celebration.

Bake Time: 22–26 minutes

Cooling Time: 1 hour

Servings: 8–10

Makes: One 3-layer, 5-inch cake

Greek yogurt frosting

Ingredients

  • 1½ cups whole-milk plain Greek yogurt

  • 2 tablespoons maple syrup

  • ¼ teaspoon pure vanilla extract

  • Zest of 1 lemon

  • 1 teaspoon fresh lemon juice

Directions

  1. Place the Greek yogurt in a fine-mesh strainer lined with cheesecloth or a paper towel and set it over a bowl.

  2. Let it drain for at least 30 minutes, or overnight in the refrigerator for an even thicker frosting.

  3. Transfer the yogurt to a bowl and stir in the maple syrup, vanilla, lemon zest, and lemon juice until smooth.

  4. Refrigerate until you're ready to frost the cake.

Ingredients for a naturally sweetened baby smash cake recipe

Ingredients

  • 2 cups all-purpose flour +1 Tbsp (to be mixed with strawberries)

  • 2 teaspoons baking powder

  • ¼ teaspoon baking soda

  • ½ teaspoon salt

  • ½ cup unsalted butter, melted and slightly cooled

  • ½ cup whole-milk plain Greek yogurt

  • ½ cup unsweetened applesauce

  • 1/2 cup pure maple syrup

  • 4 eggs, lightly beaten

  • 2 teaspoon pure vanilla extract

  • Zest of 2 lemons

  • 2 tablespoons fresh lemon juice

  • 1 cup finely diced strawberries, patted dry + more for decoration

Directions

  1. Preheat the oven to 350°F (175°C). Grease three 5-inch cake pans and line the bottoms with parchment paper.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

  3. In a separate large bowl, whisk together the melted butter, Greek yogurt, applesauce, maple syrup, eggs, vanilla, lemon zest, and lemon juice until smooth.

  4. Add the dry ingredients to the wet ingredients and stir just until combined. Avoid overmixing.

  5. Toss diced strawberries with 1 Tbsp flour. Gently fold in the diced strawberries.

  6. Divide the batter evenly between the prepared cake pans.

  7. Bake for 22–26 minutes, or until a toothpick inserted into the center comes out clean.

  8. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

  9. Once cooled, spread the Greek yogurt frosting between each layer and over the top of the cake.

  10. Decorate with fresh berries and a little extra lemon zest before serving.

For the best results, chill the assembled cake for 20–30 minutes before serving. This helps the Greek yogurt frosting set and makes slicing easier.

Recipe changes

  • Omit the lemon zest and lemon juice.

  • Fold in 1 cup finely diced ripe peaches, patted dry.

Choose one:

  • 1–2 teaspoons beet juice (from cooked beets)

  • 1 tablespoon freeze-dried strawberry or raspberry powder

Choose one:

  • A pinch of turmeric (use sparingly)

  • Extra lemon zest

What pans can you use for a smash cake?

If you don't have three 5-inch cake pans (and let's be honest, many parents don't), don't worry. This recipe is flexible and works well in a variety of pans.

You can use:

  • A standard cupcake or muffin tin for individual smash cake cupcakes

  • Two 8-inch round cake pans

  • A square or rectangular baking dish

  • Mini loaf pans

The shape doesn't matter. Your baby will be just as thrilled to dig into a cupcake as they would a layered cake.

For the freshest presentation, assemble and decorate the cake the day you plan to serve it.

Can I freeze a smash cake?

Yes. Once the cake layers have cooled completely, wrap each layer tightly in plastic wrap and place them in a freezer-safe bag or container. Freeze for up to 3 months.

Thaw overnight in the refrigerator before frosting and decorating.

Can I make this smash cake dairy-free?

We haven't tested a dairy-free version of this recipe, but you could experiment with a dairy-free plain yogurt for the frosting and a plant-based butter alternative in the cake. Keep in mind that these substitutions may change the texture and flavor.
