Strawberry & Rhubarb Smoothie

April brings the welcome return of strawberries, a sweet and juicy red fruit. This beloved fruit pairs perfectly with rhubarb, another seasonal treat. After a long winter with few fruits available, the return of these two fruits is a much-anticipated spring delight. This recipe is perfect as a dessert for the whole family or as a snack over yogurt or by itself!

 

The recipe

Starting 6 months

Prep time: 10 minutes | Cooking time: 5 minutes | Total: 15 minutes

  • The texture of the smoothie can be adjusted based on the baby’s age. For younger babies, a smoother and thicker texture is recommended. As the baby learns to swallow better, the smoothie can be made more liquid.

 

What you'll need for 4 servings of about 6 oz each

  • 2 stalks of rhubarb

  • 15 strawberries (or about 5 oz)

  • A few mint leaves (optional)

 

Steps

  1. Wash the rhubarb, strawberries and mint (if using)

  2. Peel the rhubarb, cut into pieces and add to a saucepan.

  3. Add a little bit of water to the saucepan, cover it and cook over high heat for 2 minutes. 

  4. Hull the strawberries and cut the larger ones in half. 

  5. Add them to the saucepan, reduce the heat to low and continue to cook. 
  6. Remove from the heat as soon as it starts boiling again and blend everything until you obtain a smooth texture. You can add the mint leaves before blending if using.
  7. Let it cool and refrigerate for 1 hour before serving. 

Tip: This recipe doesn’t necessarily call for sugar but if you want to and your child is a little older, you can either add 1 tbsp with the rhubarb while cooking (especially if it is early in the season and fruits are not as sweet and juicy) or serve it with whipped cream on top that kids can apply themselves to make it even more fun!
